This truffle, known as the Perigord truffle or French truffle, is valued for its deep aroma and flavour and is highly prized in kitchens all across the world. The large investment made by Spain in this type of truffle cultivation has positioned Spain as the greatest global producer and the quality of the origin is recognised by the world's most renowned chefs. During the summer months, the melanosporum truffle from the southern hemisphere is available, with Australia and Chile being the main producers.
